Another of our cheeses that is often found on Michelin starred cheeseboards, Dorstone was created by Charlie Westhead of Neil’s Yard Creamery. It is a goats cheese made to a traditional recipe which involves a lot of time, manual work and patience. That gives Dorstone its signature fluffy texture and gentle acidity. It is rolled in edible vegetal ash – a traditional French technique which contributes toward its texture and flavour. The whorl-like wrinkles are formed thanks to a yeast called geotrichum, which is naturally present in goat’s milk and contributes toward the cheese’s distinctive texture and bright, herbaceous taste
