Sparkenhoe Red Leicester

This beautiful cheese is the only remaining Red Leicester made the traditional way – with unpasteurised milk. It has a nutty texture with tasting notes of fruit and caramel, it is absolutely delectable. Having died out by the 50s, the cheese was restored by dairy farmers David and Jo Clarke who – in 2005 – resurrected this classic cheese on a farm it had been made on as far back as 1745
